About the role
Due to positive growth in our Healthcare (Seniors) segment, Sodexo are calling for applications for an experienced and passionate Head Chef to join our team in Cessnock, NSW.
As the Head Production Chef, you will manage the day to day operation of the Central Production Kitchen and lead a large team in the delivery of healthy, creative and dietary specific meals for our residents.
This hands on role will report into and work closely with our Client Services Manager to meet and exceed both Sodexo and Client standards whilst providing continuous improvement of the catering operation. This role will give you the opportunity to problem solve, drive enthusiasm and team engagement while consulting with key stakeholders on a regular basis.
Other duties would include but not limited to:
- Manage the production staff to insure efficiency, quality, cleanliness, organisation and proficiency
- Ensure proper sanitation guidelines are maintained
- Creativity and ability to develop and implement menus as required
- Oversight of financial Reporting including labour and wastage
- Oversee the OH&S procedures and implementation
- Understand and maintain all Sodexo HACCP procedures
- Follow and maintain Company food safety procedures at all times
- Provide coaching and mentoring to develop your team
- Carry out quality checks on food
- Stay up to date with Health and Safety Regulations
As the Head Chef you will be hands on with the food preparation; while at the same time being completely responsible for running and managing the production kitchen operation. You will be dedicated and highly knowledgeable across Food Safety Standards, Workplace Health & Safety and HACCP and have solid financial understanding of catering operations, including menu design, food cost and wastage.
With demonstrated experience from within the Aged Care/Healthcare industry you will be fully conversant with special dietary requirements including allergies/intolerances, supplements and texture modified (soft & pureed) foods and have exceptional customer interaction skills. Experience in managing a production kitchen where food is prepared at a predetermined point and then dispersed on site to various other locations will be highly regarded.
