With Crown Sydney setting a new benchmark in Sydney’s dining scene we are now looking for a suitably experienced and passionate Chef De Cuisine to guide the team to achieve new heights in culinary excellence in a Tapas style VIP outlet at Crown Sydney. This is will not be a standard Chef De Cuisine role as you will be encouraged to deliver creative and delicious menus that showcase the very best tapas experience. Reporting to the Executive Sous Chef, you will be required to train & mentor your team whilst liaising with a wide range of stakeholders including senior level management. Your advanced time management, organisational and task delegation skills will ensure efficient daily kitchen operation.

Key duties of this position will include:

  • Creation of modern enticing menus within a Mediterranean tapas concept
  • Have a flexible approach to be able to offer a bespoke dining experience to your guests
  • Management of a small and diverse team of Chefs and Environmental Service Attendants
  • Understanding of strict compliance to Crown’s HACCP program
  • Financial accountability to ensure the operation is profitable
  • Building strong relationships with the management group, colleagues and suppliers

Key selection criteria:

  • Experience in creating a Mediterranean Tapas style menu
  • Demonstrated experience in a luxury culinary operation is imperative
  • Knowledge of the latest trends in the industry to execute bespoke menus to our VIP guests
  • Advanced team building skills to ensure a seamless operation in a high expectation environment
  • Ability to create innovative menus that create a different experience to the traditional norms
